Direct-pressed Pinot Noir, aged for extended periods in oak. White fruit, ripe citrus; full body with a granite-like salty note; long finish. Pairings: Sea bream tartare, roast poultry, tempura/sashimi, soft cheeses. This is a wine for cellaring (8 years of aging), perfect for themed tastings and gourmet dinners.
